These Cinnamon Sugar Churro Cookies are crispy on the outside and soft on the inside, coated in a sweet cinnamon sugar that takes your taste buds on a delightful journey.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon ground cinnamon
- 1/2 cup granulated sugar (for coating)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and 1 cup of sugar until light and fluffy.
- Add the vanilla extract and eggs, one at a time, mixing well after each addition.
- In another bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop tablespoon-sized portions of dough and roll them into balls.
- In a small bowl, combine the 1/2 cup of granulated sugar and 1 tablespoon of ground cinnamon.
- Roll each dough ball in the cinnamon sugar mixture to coat completely.
- Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For extra flavor, you can add a pinch of nutmeg to the dough mixture.
- Store cookies in an airtight container at room temperature for up to a week.
