- 4 boneless, skinless chicken breasts
- 1/4 cup orange juice
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 cup mixed fresh herbs (parsley, basil, cilantro)
- 1/2 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1 avocado, diced
- 1 tablespoon balsamic vinegar
Instructions
- In a bowl, whisk together orange juice, lemon juice, olive oil, honey, garlic, salt, and pepper.
- Place chicken breasts in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the marinade.
- Grill the chicken for 6-7 minutes per side, or until cooked through and juices run clear.
- While the chicken is grilling, prepare the herb salad by combining mixed herbs, cherry tomatoes, red onion, and avocado in a large bowl.
- Drizzle the salad with balsamic vinegar and toss gently to combine.
- Once the chicken is done, allow it to rest for a few minutes before slicing.
- Serve the grilled chicken over the fresh herb salad.
