Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup orange juice
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup mixed fresh herbs (parsley, basil, cilantro)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1 avocado, diced
  • 1 tablespoon balsamic vinegar

Instructions

  1. In a bowl, whisk together orange juice, lemon juice, olive oil, honey, garlic, salt, and pepper.
  2. Place chicken breasts in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the marinade.
  4. Grill the chicken for 6-7 minutes per side, or until cooked through and juices run clear.
  5. While the chicken is grilling, prepare the herb salad by combining mixed herbs, cherry tomatoes, red onion, and avocado in a large bowl.
  6. Drizzle the salad with balsamic vinegar and toss gently to combine.
  7. Once the chicken is done, allow it to rest for a few minutes before slicing.
  8. Serve the grilled chicken over the fresh herb salad.
