Instructions

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat a large skillet over medium heat. Add the diced pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.
  3. In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.
  4. Once the pasta is cooked, reserve 1 cup of pasta water, then drain the spaghetti.
  5. Add the hot spaghetti to the skillet with pancetta. Quickly pour the egg mixture over the pasta and toss vigorously, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.
  6. Serve immediately, garnished with extra Parmesan cheese, black pepper, and chopped parsley if desired.
