- 400g spaghetti
- 150g pancetta, diced
- 2 large eggs
- 100g grated Parmesan cheese
- Freshly cracked black pepper, to taste
- Salt, for pasta water
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
- While the pasta is cooking, heat a large skillet over medium heat. Add the diced pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.
- In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.
- Once the pasta is cooked, reserve 1 cup of pasta water, then drain the spaghetti.
- Add the hot spaghetti to the skillet with pancetta. Quickly pour the egg mixture over the pasta and toss vigorously, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.
- Serve immediately, garnished with extra Parmesan cheese, black pepper, and chopped parsley if desired.
