- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 32 oz cream cheese, softened
- 1 1/4 cups granulated sugar
- 1 tsp vanilla extract
- 4 large eggs
- 2/3 cup sour cream
- 2/3 cup heavy cream
Instructions
- Preheat oven to 325°F (165°C).
- Mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan.
- Bake crust for 10 minutes, then cool.
- Beat cream cheese until smooth. Add sugar and vanilla, mixing well.
- Add eggs one at a time, mixing after each.
- Blend in sour cream and heavy cream until smooth.
- Pour filling over crust. Bake for 55-60 minutes until set but slightly wobbly in the center.
- Cool in the oven with the door slightly open, then refrigerate for at least 4 hours.

- Use room-temperature cream cheese for smooth texture.
- Do not overmix the batter to prevent cracks.
