Description
A classic Cobb Salad loaded with fresh ingredients and a delicious homemade dressing.
Ingredients

- 6 cups mixed salad greens
- 1 cup cooked chicken, diced
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 4 strips of bacon, cooked and crumbled
- 1/2 cup blue cheese, crumbled
- 2 hard-boiled eggs, chopped
- 1/2 cup red wine vinegar
- 1/4 cup olive oil
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, add the mixed salad greens.
- Top the greens with diced chicken, cherry tomatoes, avocado, crumbled bacon, blue cheese, and chopped hard-boiled eggs.
- In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately.
Notes
- Feel free to add or substitute any of your favorite ingredients.
- For a vegetarian version, omit the chicken and bacon.
