Ingredients

  • 6 cups mixed salad greens
  • 1 cup cooked chicken, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 4 strips of bacon, cooked and crumbled
  • 1/2 cup blue cheese, crumbled
  • 2 hard-boiled eggs, chopped
  • 1/2 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, add the mixed salad greens.
  2. Top the greens with diced chicken, cherry tomatoes, avocado, crumbled bacon, blue cheese, and chopped hard-boiled eggs.
  3. In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, salt, and pepper.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Serve immediately.

Notes
