Instructions
- Blend cashews in a food processor until finely ground.
- Add shredded coconut, coconut oil, maple syrup, vanilla, and salt. Process into a sticky dough.
- Scoop tablespoon-sized portions and roll into balls.
- Chill in the fridge for 30 minutes to firm up.
- Serve or store in an airtight container.
