Ingredients

  • 500g white fish fillets, cut into chunks
  • 1 cup fresh spinach leaves
  • 1 can (400ml) coconut milk
  • 2 tbsp coconut oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 tomatoes, diced
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 green chili, sliced (optional)
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat coconut oil in a pan over medium heat.
  2. Add onion, garlic, and ginger. Sauté until soft.
  3. Stir in curry powder, turmeric, cumin, and coriander. Cook for 1 minute.
  4. Add tomatoes and green chili. Cook until tomatoes soften.
  5. Pour in coconut milk. Simmer for 5 minutes.
  6. Add fish chunks and spinach. Cook for 6-8 minutes until fish is done.
  7. Season with salt and garnish with cilantro.
  8. Serve hot with rice or bread.

Notes

  • Use firm fish like cod or tilapia.
  • Adjust spice level by adding more or less chili.
  • For extra creaminess, use full-fat coconut milk.
