- 500g white fish fillets, cut into chunks
- 1 cup fresh spinach leaves
- 1 can (400ml) coconut milk
- 2 tbsp coconut oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 2 tomatoes, diced
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 green chili, sliced (optional)
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat coconut oil in a pan over medium heat.
- Add onion, garlic, and ginger. Sauté until soft.
- Stir in curry powder, turmeric, cumin, and coriander. Cook for 1 minute.
- Add tomatoes and green chili. Cook until tomatoes soften.
- Pour in coconut milk. Simmer for 5 minutes.
- Add fish chunks and spinach. Cook for 6-8 minutes until fish is done.
- Season with salt and garnish with cilantro.
- Serve hot with rice or bread.
Notes
- Use firm fish like cod or tilapia.
- Adjust spice level by adding more or less chili.
- For extra creaminess, use full-fat coconut milk.
