- 1 lb shrimp, peeled and deveined
- 1 can (14 oz) coconut milk
- 2 cups chicken or vegetable broth
- 1 tbsp ginger, minced
- 2 cloves garlic, minced
- 1 tbsp lime juice
- 1 tbsp fish sauce
- 1 tsp sugar
- 1 cup mushrooms, sliced
- 1 red bell pepper, sliced
- 2 green onions, chopped
- 1 tbsp cilantro, chopped
- 1 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat oil in a pot over medium heat.
- Add ginger and garlic, sauté for 1 minute.
- Pour in coconut milk and broth, bring to a simmer.
- Add mushrooms and bell pepper, cook for 5 minutes.
- Stir in shrimp, lime juice, fish sauce, and sugar.
- Cook until shrimp turns pink, about 3-4 minutes.
- Season with salt and pepper.
- Garnish with green onions and cilantro.
- Serve hot.
