Ingredients

- 2 medium beets, cooked and peeled
- 2 cups kefir
- 1 cup vegetable broth
- 1 cucumber, diced
- 1/2 cup radishes, sliced
- 2 tablespoons fresh dill, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Hard-boiled eggs for garnish (optional)
Instructions
- In a blender, combine the cooked beets, kefir, and vegetable broth. Blend until smooth.
- Pour the beet mixture into a large bowl and stir in the diced cucumber, sliced radishes, dill, and lemon juice.
- Season with salt and pepper to taste, then mix well.
- Chill the soup in the refrigerator for at least 1 hour before serving.
- Serve in bowls, garnished with hard-boiled eggs if desired.
