Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup pearl couscous
  • 4 cups chicken broth
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Add garlic, thyme, salt, and pepper. Stir for 1 minute.
  4. Pour in chicken broth and add bay leaf. Bring to a boil.
  5. Add chicken breasts and simmer for 15 minutes until cooked through.
  6. Remove chicken, shred it, and return to the pot.
  7. Add pearl couscous and cook for 8-10 minutes until tender.
  8. Stir in fresh parsley before serving.
