- 2 boneless, skinless chicken breasts
- 1 cup pearl couscous
- 4 cups chicken broth
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bay leaf
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes until softened.
- Add garlic, thyme, salt, and pepper. Stir for 1 minute.
- Pour in chicken broth and add bay leaf. Bring to a boil.
- Add chicken breasts and simmer for 15 minutes until cooked through.
- Remove chicken, shred it, and return to the pot.
- Add pearl couscous and cook for 8-10 minutes until tender.
- Stir in fresh parsley before serving.
Notes
- Use leftover rotisserie chicken for a quicker version.
- Store leftovers in an airtight container for up to 3 days.
- Add a squeeze of lemon for extra brightness.
