Instructions
- Rinse the quinoa under cold water.
- Cook the quinoa according to package instructions.
- In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, and red bell pepper.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for 30 minutes before serving.
