- 2 cups collard greens
- 1 cup black-eyed peas
- 1 pound smoked turkey leg
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt

- 4 cups chicken broth
- 1 cup cornmeal
- 2 cups buttermilk
- 2 eggs
Instructions
- Wash the collard greens and chop them.
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add smoked turkey leg and sauté for a few minutes.
- Add collard greens, black-eyed peas, chicken broth, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- In a separate bowl, mix cornmeal, buttermilk, and eggs.
- Pour the mixture into a greased baking dish.
- Bake at 400°F for 25 minutes or until golden brown.
Notes
- Adjust seasoning to taste.
- For a vegetarian option, omit the turkey.
- Serve with cornbread for a complete meal.
