  • 1 medium onion, quartered

  • 1 small head of cabbage, cut into wedges
  • 4 carrots, cut into chunks
  • 4 potatoes, quartered

Instructions

  1. Place the corned beef in a large pot and add water.
  2. Add onion, garlic, and pickling spice.
  3. Bring to a boil, then reduce heat to low.
  4. Cover and simmer for 2.5 to 3 hours, until tender.
  5. Add cabbage, carrots, and potatoes to the pot.
  6. Cook for an additional 30 minutes, until vegetables are tender.
