- 2 pounds corned beef brisket
- 1 medium onion, quartered
- 4 cloves garlic, minced
- 6 cups water
- 1 tablespoon pickling spice
- 1 small head of cabbage, cut into wedges
- 4 carrots, cut into chunks
- 4 potatoes, quartered
Instructions
- Place the corned beef in a large pot and add water.
- Add onion, garlic, and pickling spice.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 2.5 to 3 hours, until tender.
- Add cabbage, carrots, and potatoes to the pot.
- Cook for an additional 30 minutes, until vegetables are tender.
- Remove meat and let it rest before slicing.
- Serve with vegetables on the side.

- Adjust cooking time based on the size of the brisket.
- Feel free to add other vegetables like turnips or parsnips.
- Leftovers can be used in sandwiches or soups.
