- 3 pounds corned beef brisket
- 1 large head of cabbage, cut into wedges
- 4 large carrots, peeled and cut into chunks
- 6 medium potatoes, peeled and cut into quarters
- 1 tablespoon black peppercorns
- 4 garlic cloves, minced
- 1 onion, quartered
- Water, enough to cover
Instructions
- Place the corned beef in a large pot.
- Add the peppercorns, garlic, and onion.
- Cover with water and bring to a boil.
- Reduce heat and simmer for 2.5 hours.
- Add the potatoes and carrots to the pot.
- Simmer for an additional 30 minutes.
- Add the cabbage wedges and cook for 15 more minutes.
- Remove the meat and let it rest before slicing.
- Serve the corned beef with vegetables on the side.
