  • 4 garlic cloves, minced
  • 1 onion, quartered
  • Water, enough to cover

Instructions

  1. Place the corned beef in a large pot.
  2. Add the peppercorns, garlic, and onion.
  3. Cover with water and bring to a boil.
  4. Reduce heat and simmer for 2.5 hours.
  5. Add the potatoes and carrots to the pot.
  6. Simmer for an additional 30 minutes.
  7. Add the cabbage wedges and cook for 15 more minutes.
  8. Remove the meat and let it rest before slicing.
  9. Serve the corned beef with vegetables on the side.
