  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and quartered

  • 4 cups water
  • 1 tablespoon mustard seeds
  • 1 tablespoon black peppercorns
  • 1 bay leaf

Instructions

  1. Place the corned beef in a large pot.
  2. Add onion, carrots, potatoes, water, mustard seeds, peppercorns, and bay leaf.
  3. Bring to a boil, then reduce heat and simmer for 2.5 to 3 hours.
  4. Add cabbage during the last 15-20 minutes of cooking.
  5. Remove the corned beef, let it rest for 10 minutes, then slice.
  6. Serve beef with vegetables.
