Ingredients

- 3 pounds corned beef brisket
- 1 medium onion, quartered
- 4 carrots, peeled and cut into chunks
- 4 potatoes, peeled and quartered
- 1 head of cabbage, cut into wedges
- 4 cups water
- 1 tablespoon mustard seeds
- 1 tablespoon black peppercorns
- 1 bay leaf
Instructions
- Place the corned beef in a large pot.
- Add onion, carrots, potatoes, water, mustard seeds, peppercorns, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 2.5 to 3 hours.
- Add cabbage during the last 15-20 minutes of cooking.
- Remove the corned beef, let it rest for 10 minutes, then slice.
- Serve beef with vegetables.
Notes
- Choose a brisket with good marbling for better flavor.
- Adjust spices to your preference.
- Leftovers can be used in sandwiches.
