Ingredients

- 1 lb corned beef, diced
- 4 cups cabbage, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 4 cups beef broth
- 2 cups water
- 2 cloves garlic, minced
- 1 tsp black pepper
- 1 tsp thyme
Instructions
- In a large pot, sauté the onion and garlic until fragrant.
- Add the diced corned beef and cook until browned.
- Stir in the carrots, potatoes, and cabbage.
- Add the beef broth and water.
- Season with black pepper and thyme.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Serve hot.

- Use leftover corned beef for quicker preparation.
- Store leftovers in the refrigerator for up to 3 days.
