This hearty slow cooker corned beef and cabbage recipe is perfect for a comforting meal. The beef becomes tender and infused with flavor, making it a favorite for St. Patrick’s Day or any day of the year.

- 4 pounds corned beef brisket
- 1 onion, quartered
- 4 cloves garlic, minced
- 4 carrots, cut into 2-inch pieces
- 1 pound small potatoes, halved
- 1 small head of cabbage, cut into wedges
- 4 cups beef broth
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon black pepper
- 1 teaspoon thyme
- 2 bay leaves
Instructions
- Place the onion and garlic at the bottom of the slow cooker.
- Layer the carrots and potatoes on top of the onion and garlic.
- Rinse the corned beef under cold water and place it on top of the vegetables.
- In a bowl, mix together the beef broth, Dijon mustard, Worcestershire sauce, black pepper, thyme, and bay leaves. Pour this mixture over the corned beef.
- Cover and cook on low for 8 to 10 hours, or until the beef is tender.
- In the last hour of cooking, add the cabbage wedges on top of the beef and cover.
- Once done, remove the corned beef and let it rest for 10 minutes before slicing.
- Serve the corned beef with the vegetables and a drizzle of the cooking liquid.
Notes
- For extra flavor, you can add additional spices like allspice or cloves.
- Leftovers can be used in sandwiches or hash for another meal.
