  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 2 cans (15 oz each) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 12 jalapeños, chopped (optional)

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the chopped onion and minced garlic. Cook until softened.
  3. Stir in the chili powder, cumin, smoked paprika, salt, and pepper.
  4. Add the kidney beans, diced tomatoes, tomato paste, and beef broth.
  5. If using, add the chopped jalapeños.
  6. Bring to a boil, then reduce heat and simmer for 30-45 minutes.
  7. Serve hot, garnished with your choice of toppings.

Notes

  • Adjust spice level by adding more or fewer jalapeños.
