Ingredients

- 2 lbs ground beef
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 2 cans (15 oz each) diced tomatoes
- 1 can (6 oz) tomato paste
- 1 cup beef broth
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1–2 jalapeños, chopped (optional)
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add the chopped onion and minced garlic. Cook until softened.
- Stir in the chili powder, cumin, smoked paprika, salt, and pepper.
- Add the kidney beans, diced tomatoes, tomato paste, and beef broth.
- If using, add the chopped jalapeños.
- Bring to a boil, then reduce heat and simmer for 30-45 minutes.
- Serve hot, garnished with your choice of toppings.
Notes
- Adjust spice level by adding more or fewer jalapeños.
- Can be made in a slow cooker for convenience.
- Great with cornbread or over rice.
