Description

A hearty and flavorful beef stew with the tartness of cranberries.


Ingredients

  • 2 lbs beef stew meat, cubed
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups beef broth
  • 1 cup dried cranberries
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add beef and brown on all sides. Remove and set aside.
  2. Add onion and garlic to the pot. Cook until soft.
  3. Return beef to the pot. Add carrots, celery, beef broth, cranberries, tomato paste, thyme, and rosemary.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours.
  5. Season with salt and pepper. Serve hot.

Notes

  • You can add potatoes if desired.
  • For extra flavor, use fresh herbs.
