Description
A hearty and flavorful beef stew with the tartness of cranberries.
Ingredients

- 2 lbs beef stew meat, cubed
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 4 cups beef broth
- 1 cup dried cranberries
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add beef and brown on all sides. Remove and set aside.
- Add onion and garlic to the pot. Cook until soft.
- Return beef to the pot. Add carrots, celery, beef broth, cranberries, tomato paste, thyme, and rosemary.
- Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours.
- Season with salt and pepper. Serve hot.
Notes
- You can add potatoes if desired.
- For extra flavor, use fresh herbs.
