Description
Delicious bite-sized appetizers combining cranberry, chicken, and brie in flaky puff pastry.
Ingredients

- 1 sheet puff pastry, thawed
- 1 cup cooked chicken, shredded
- 1/2 cup cranberry sauce
- 4 oz brie cheese, cubed
- 1 egg, beaten (for egg wash)
- 1 tbsp fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out puff pastry and cut into 2-inch squares.
- Place a small amount of shredded chicken, cranberry sauce, and a cube of brie in the center of each square.
- Fold the corners of the pastry over the filling, pinching to seal.
- Brush with egg wash and sprinkle with thyme, salt, and pepper.
- Bake for 15-20 minutes until golden brown.
- Serve warm.
Notes
- Use leftover chicken or rotisserie chicken for convenience.
- Can be made ahead and reheated before serving.
- Adjust cranberry sauce quantity based on sweetness preference.
