Ingredients

  • 1 cup sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 3/4 cup orange juice
  • 1/4 cup vegetable oil
  • 1 tbsp orange zest
  • 1 cup fresh cranberries, chopped
  • 1 cup powdered sugar
  • 2 tbsp orange juice

Instructions

  1. Preheat oven to 350°F. Grease a 9×5 inch loaf pan.
  2. Mix flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Beat egg, orange juice, oil, and zest in another bowl.
  4. Stir wet ingredients into dry ingredients until just combined.
  5. Fold in cranberries.
  6. Pour batter into prepared pan. Bake for 50-60 minutes.
  7. Cool in pan for 10 minutes, then transfer to wire rack.
  8. Mix powdered sugar and orange juice for glaze. Drizzle over cooled bread.
