Ingredients

  • 8 oz (225 g) pasta of choice
  • 2 ripe avocados, halved and pitted
  • 2 cloves garlic, minced
  • 1/4 cup (60 ml) fresh lemon juice
  • 1/4 cup (60 ml) olive oil
  • 1/4 cup (60 g) grated Parmesan cheese (optional)
  • Salt and pepper to taste
  • 1 cup (150 g) cherry tomatoes, halved
  • Fresh basil leaves for garnish

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a food processor, combine avocados, garlic, lemon juice, olive oil, and Parmesan cheese (if using). Blend until smooth and creamy.
  3. Season the avocado sauce with salt and pepper to taste.
  4. In a large mixing bowl, combine cooked pasta and avocado sauce, tossing to coat evenly.
  5. Add cherry tomatoes and gently mix to combine.
  6. Serve immediately, garnished with fresh basil leaves.

Notes

  • For a vegan option, omit the Parmesan cheese.
  • This dish is best served fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 1 day.
