- 8 oz (225 g) pasta of choice
- 2 ripe avocados, halved and pitted
- 2 cloves garlic, minced
- 1/4 cup (60 ml) fresh lemon juice
- 1/4 cup (60 ml) olive oil
- 1/4 cup (60 g) grated Parmesan cheese (optional)
- Salt and pepper to taste
- 1 cup (150 g) cherry tomatoes, halved
- Fresh basil leaves for garnish
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a food processor, combine avocados, garlic, lemon juice, olive oil, and Parmesan cheese (if using). Blend until smooth and creamy.
- Season the avocado sauce with salt and pepper to taste.
- In a large mixing bowl, combine cooked pasta and avocado sauce, tossing to coat evenly.
- Add cherry tomatoes and gently mix to combine.
- Serve immediately, garnished with fresh basil leaves.
Notes
- For a vegan option, omit the Parmesan cheese.
- This dish is best served fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 1 day.
