Ingredients
Scale
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 2 (8 oz) packages cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 cups fresh blueberries
- 1 tablespoon lemon juice
Instructions
- In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until well combined. Press the mixture firmly into the bottom of a 9×9 inch pan to create the crust.
- In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
- In another bowl, toss the blueberries with lemon juice. Fold the blueberries into the cheesecake mixture carefully to avoid breaking them.
- Spread the blueberry cheesecake mixture over the prepared crust, smoothing the top with a spatula.
- Cover with plastic wrap and refrigerate for at least 4 hours or until set. For best results, refrigerate overnight.
- Once set, cut into bars and serve chilled. Enjoy your creamy blueberry cheesecake bars!
Notes
- You can substitute the blueberries with other berries like strawberries or raspberries if desired.
- For an extra touch, top the bars with additional blueberries or a drizzle of blueberry sauce before serving.
