Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon Cajun seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned, about 5 minutes per side. Remove and set aside.
  3. Add onion, bell pepper, and celery to the pot. Sauté until softened, about 5 minutes.
  4. Stir in garlic and Cajun seasoning. Cook for 1 minute.
  5. Pour in chicken broth, diced tomatoes, and smoked paprika. Bring to a boil.
  6. Shred the cooked chicken and return it to the pot. Simmer for 15 minutes.
  7. Stir in heavy cream and let simmer for another 5 minutes.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley before serving.

Notes

  • Adjust Cajun seasoning for more or less spice.
  • Use rotisserie chicken for a quicker version.
  • Store leftovers in the fridge for up to 3 days.
