- 2 boneless, skinless chicken breasts (about 1 lb)
- 1 medium head cauliflower, cut into florets
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix heavy cream, Parmesan, garlic powder, onion powder, thyme, salt, and pepper.
- Heat olive oil in a skillet over medium heat. Cook chicken for 5 minutes per side until lightly browned.
- Arrange cauliflower in a baking dish. Place chicken on top.
- Pour cream mixture over chicken and cauliflower.
- Sprinkle mozzarella cheese on top.
- Bake for 25-30 minutes until bubbly and golden.
- Let rest for 5 minutes before serving.
Notes
- You can use chicken thighs for extra juiciness.
- Substitute half-and-half for heavy cream for a lighter version.
- Add broccoli or spinach for extra veggies.
