Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 1 medium head cauliflower, cut into florets
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix heavy cream, Parmesan, garlic powder, onion powder, thyme, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat. Cook chicken for 5 minutes per side until lightly browned.
  4. Arrange cauliflower in a baking dish. Place chicken on top.
  5. Pour cream mixture over chicken and cauliflower.
  6. Sprinkle mozzarella cheese on top.
  7. Bake for 25-30 minutes until bubbly and golden.
  8. Let rest for 5 minutes before serving.
