- 2 boneless, skinless chicken breasts, diced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium zucchini, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken and cook until no longer pink, about 5-6 minutes. Remove and set aside.
- In the same skillet, sauté onion and garlic until fragrant, about 2 minutes.
- Add bell peppers and zucchini, cooking until softened, about 5 minutes.
- Return chicken to the skillet. Stir in heavy cream, paprika, salt, pepper, and thyme.
- Simmer for 3-4 minutes until the sauce thickens slightly.
- Serve hot.

- Adjust seasoning to taste.
- Use coconut milk instead of heavy cream for a dairy-free option.
