Ingredients

- 2 cups cooked chicken, shredded
- 1 cup rice, uncooked
- 1 can cream of mushroom soup
- 1 cup chicken broth
- 1 cup frozen mixed vegetables
- 1/2 cup shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Mix chicken, rice, soup, broth, vegetables, and seasonings in a bowl.
- Transfer to a greased casserole dish.
- Cover with foil and bake for 45 minutes.
- Remove foil, sprinkle cheese on top, and bake for 10 more minutes.
- Let cool for 5 minutes before serving.
Notes
- Use leftover chicken or rotisserie chicken for convenience.
- Add more broth if you prefer a saucier casserole.
