Ingredients

  • 1 lb boneless chicken breast, cubed
  • 2 cups elbow macaroni
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) corn, drained
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook macaroni according to package instructions. Drain and set aside.
  2. Heat olive oil in a large pot over medium heat. Add chicken and cook until browned.
  3. Stir in taco seasoning, diced tomatoes, black beans, corn, and chicken broth. Simmer for 10 minutes.
  4. Add heavy cream and cooked macaroni. Stir well and simmer for another 5 minutes.
  5. Sprinkle shredded cheese on top and let it melt before serving.
