- 1 lb boneless chicken breast, cubed
- 2 cups elbow macaroni
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) corn, drained
- 1 cup chicken broth
- 1 cup heavy cream
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook macaroni according to package instructions. Drain and set aside.
- Heat olive oil in a large pot over medium heat. Add chicken and cook until browned.
- Stir in taco seasoning, diced tomatoes, black beans, corn, and chicken broth. Simmer for 10 minutes.
- Add heavy cream and cooked macaroni. Stir well and simmer for another 5 minutes.
- Sprinkle shredded cheese on top and let it melt before serving.
Notes
- For extra spice, add a diced jalapeño.
- Top with fresh cilantro or sour cream if desired.
- Store leftovers in an airtight container for up to 3 days.
