Ingredients

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned, about 5-6 minutes.
  3. Stir in rice, garlic powder, Italian seasoning, salt, and pepper.
  4. Pour in chicken broth, heavy cream, and marinara sauce. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
  6. Sprinkle mozzarella and Parmesan cheese on top. Cover for 2-3 minutes until melted.
  7. Serve hot.
