- 2 cups cooked chicken, shredded
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup potatoes, diced
- 1/2 cup onion, chopped
- 3 cups chicken broth
- 1 cup heavy cream
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp thyme
- 1/2 tsp garlic powder
Instructions
- Melt butter in a large pot over medium heat.
- Add onions, carrots, celery, and potatoes. Cook for 5 minutes until slightly softened.
- Stir in flour and cook for 1 minute.
- Slowly pour in chicken broth while stirring to avoid lumps.
- Add shredded chicken, salt, pepper, thyme, and garlic powder. Bring to a simmer.
- Reduce heat and cook for 15 minutes until vegetables are tender.
- Stir in heavy cream and heat for 2 more minutes.
- Serve hot.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Add frozen peas or corn for extra vegetables.
- Top with pie crust pieces or crackers for added texture.
