Ingredients

  • 1 lb chicken breast, diced
  • 1 package (9 oz) cheese tortellini
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cook tortellini according to package instructions. Drain and set aside.
  2. Heat olive oil in a pan over medium heat. Add diced chicken, salt, and pepper. Cook until no longer pink.
  3. Add minced garlic and sauté for 1 minute.
  4. Stir in fresh spinach and cook until wilted.
  5. Pour in heavy cream and Parmesan cheese. Stir until smooth.
  6. Add cooked tortellini to the pan and toss to coat evenly.
  7. Serve warm.

Notes

  • Substitute half-and-half for heavy cream for a lighter version.
