Ingredients

- 2 cups elbow macaroni
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup diced celery
- 1/4 cup diced red onion
- 1/4 cup diced red bell pepper
- 2 tbsp chopped fresh parsley
Instructions
- Cook the macaroni according to package instructions. Drain and rinse under cold water.
- In a large bowl, mix mayonnaise, sour cream, mustard, vinegar, sugar, salt, and pepper.
- Add the cooled macaroni, celery, red onion, red bell pepper, and parsley to the bowl.
- Toss everything together until well coated.
- Cover and refrigerate for at least 1 hour before serving.
Notes
- For extra crunch, add chopped pickles or cucumbers.
- Adjust seasoning to taste before serving.
- Best served chilled.
