A creamy and flavorful asparagus soup made easily in your crockpot.
Ingredients

- 2 lbs fresh asparagus, trimmed and chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp nutmeg
Instructions
- Add asparagus, onion, garlic, and vegetable broth to the crockpot.
- Cook on low for 6 hours or high for 3 hours.
- Blend the soup until smooth using an immersion blender.
- Stir in heavy cream, butter, salt, pepper, and nutmeg.
- Cook for an additional 30 minutes on low.
- Serve warm.
Notes
- Trim tough ends from asparagus before cooking.
- Adjust seasoning to taste.
- Store leftovers in the fridge for up to 3 days.
