Ingredients

  • 2 lbs fresh asparagus, trimmed and chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg

Instructions

  1. Add asparagus, onion, garlic, and vegetable broth to the crockpot.
  2. Cook on low for 6 hours or high for 3 hours.
  3. Blend the soup until smooth using an immersion blender.
  4. Stir in heavy cream, butter, salt, pepper, and nutmeg.
  5. Cook for an additional 30 minutes on low.
  6. Serve warm.
