  • 1 teaspoon vanilla extract

  • 1 cup fresh blueberries
  • 1/2 cup blueberry jam
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix well until combined.
  3. Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  5. Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.
  6. Pour the cream cheese mixture over the prepared crust in the springform pan.
  7. Bake for 50-60 minutes or until the center is set but still slightly jiggly.
  8. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  9. Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight.
  10. In a small saucepan, combine fresh blueberries, blueberry jam, and lemon juice. Cook over medium heat until the blueberries burst and the mixture thickens slightly.
  11. Let the blueberry topping cool, then spread it over the chilled cheesecake before serving.
