- 1/3 cup granulated sugar

- 24 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup fresh blueberries
- 1/2 cup blueberry jam
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix well until combined.
- Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
- Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.
- Pour the cream cheese mixture over the prepared crust in the springform pan.
- Bake for 50-60 minutes or until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight.
- In a small saucepan, combine fresh blueberries, blueberry jam, and lemon juice. Cook over medium heat until the blueberries burst and the mixture thickens slightly.
- Let the blueberry topping cool, then spread it over the chilled cheesecake before serving.
Notes
- For best results, use full-fat cream cheese.
- Make sure to let the cheesecake cool completely before refrigerating to avoid cracks.
- You can substitute fresh blueberries with frozen ones if fresh are not available.
