- 4 salmon fillets
- Salt and pepper to taste
- 1 tablespoon olive oil
- 3 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/2 teaspoon Italian seasoning
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Season the salmon fillets with salt and pepper on both sides.
- In a large skillet over medium heat, add olive oil and 1 tablespoon of butter.
- Once hot, add the salmon fillets, skin-side down. Cook for 4-5 minutes, then flip and cook for an additional 4-5 minutes until cooked through. Remove from the skillet and set aside.
- In the same skillet, add the remaining butter and minced garlic. Sauté for 30 seconds until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine.
- Add the sun-dried tomatoes, spinach, Italian seasoning, and Parmesan cheese. Stir until the spinach wilts and the sauce thickens slightly.
- Return the salmon to the skillet and spoon the sauce over each fillet. Cook for an additional 2 minutes to allow the flavors to meld.
- Garnish with fresh parsley before serving.
Notes
- Feel free to substitute fresh spinach with kale or other greens if desired.
- For extra flavor, add a splash of lemon juice to the sauce before serving.
