Ingredients

  • 4 salmon fillets
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the salmon fillets with salt and pepper on both sides.
  2. In a large skillet over medium heat, add olive oil and 1 tablespoon of butter.
  3. Once hot, add the salmon fillets, skin-side down. Cook for 4-5 minutes, then flip and cook for an additional 4-5 minutes until cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the remaining butter and minced garlic. Sauté for 30 seconds until fragrant.
  5. Pour in the heavy cream and chicken broth, stirring to combine.
  6. Add the sun-dried tomatoes, spinach, Italian seasoning, and Parmesan cheese. Stir until the spinach wilts and the sauce thickens slightly.
  7. Return the salmon to the skillet and spoon the sauce over each fillet. Cook for an additional 2 minutes to allow the flavors to meld.
  8. Garnish with fresh parsley before serving.

Notes

  • Feel free to substitute fresh spinach with kale or other greens if desired.
  • For extra flavor, add a splash of lemon juice to the sauce before serving.
