- 2 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 cup heavy cream
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add chicken breasts and cook until browned on both sides, about 4 minutes per side.
- In a baking dish, combine rice, chicken broth, heavy cream, garlic, thyme, salt, and pepper. Stir well.
- Place the browned chicken breasts on top of the rice mixture.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil, sprinkle Parmesan cheese over the top, and bake uncovered for another 10 minutes.
- Let it rest for 5 minutes before serving.
Notes
- Use fresh garlic for the best flavor.
- You can substitute heavy cream with half-and-half for a lighter version.
- Let the dish rest before serving to allow the sauce to thicken.
