Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add chicken breasts and cook until browned on both sides, about 4 minutes per side.
  3. In a baking dish, combine rice, chicken broth, heavy cream, garlic, thyme, salt, and pepper. Stir well.
  4. Place the browned chicken breasts on top of the rice mixture.
  5. Cover the dish with foil and bake for 30 minutes.
  6. Remove the foil, sprinkle Parmesan cheese over the top, and bake uncovered for another 10 minutes.
  7. Let it rest for 5 minutes before serving.
