Ingredients

- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 tsp dried thyme
- Salt and pepper to taste
- 4 medium potatoes, peeled and cubed
- 2 tbsp butter
- 1/4 cup milk
Instructions
- Heat olive oil in a pan over medium heat. Cook chicken breasts until golden, about 5 minutes per side. Remove and set aside.
- In the same pan, sauté garlic until fragrant. Add cream, broth, and thyme. Simmer for 3 minutes.
- Return chicken to the pan. Cook for 10 minutes until sauce thickens.
- Boil potatoes until tender. Drain and mash with butter and milk.
- Serve chicken with sauce over mashed potatoes.

- Adjust cream thickness by simmering longer.
- Add parsley for garnish if desired.
