Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 4 medium potatoes, peeled and cubed
  • 2 tbsp butter
  • 1/4 cup milk

Instructions

  1. Heat olive oil in a pan over medium heat. Cook chicken breasts until golden, about 5 minutes per side. Remove and set aside.
  2. In the same pan, sauté garlic until fragrant. Add cream, broth, and thyme. Simmer for 3 minutes.
  3. Return chicken to the pan. Cook for 10 minutes until sauce thickens.
  4. Boil potatoes until tender. Drain and mash with butter and milk.
  5. Serve chicken with sauce over mashed potatoes.
