Instructions
- Preheat oven to 400°F (200°C).
- Toss diced potatoes with 1 tbsp olive oil, paprika, salt, and pepper. Spread on a baking sheet.
- Roast potatoes for 25-30 minutes until golden and crispy.
- Heat remaining oil in a skillet. Cook chicken breasts until browned, about 5 minutes per side.
- Add minced garlic and sauté for 1 minute.
- Pour in chicken broth and heavy cream. Simmer for 10 minutes until sauce thickens.
- Season with thyme, salt, and pepper.
- Serve chicken with roasted potatoes and drizzle with creamy garlic sauce.
