Ingredients

- 2 chicken breasts
- 1 cup mushrooms, sliced
- 2 potatoes, diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan
- 2 tbsp basil pesto
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Season chicken with salt and pepper, then cook until browned.
- Remove chicken and sauté garlic and mushrooms.
- Add potatoes and cook until tender.
- Pour in heavy cream and stir in Parmesan.
- Return chicken to the pan and simmer.
- Top with basil pesto before serving.
