Description

- 2 boneless skinless chicken breasts
- 1 tbsp olive oil
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken with salt and pepper, then cook until browned, about 5 minutes per side. Remove and set aside.
- In the same skillet, sauté mushrooms until soft, about 5 minutes.
- Add garlic and cook for 1 minute.
- Pour in chicken broth and scrape any browned bits from the pan.
- Stir in heavy cream and thyme.
- Return chicken to the skillet and simmer for 5 minutes until sauce thickens.
