Ingredients

  • 1 pound fresh mushrooms, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon thyme (fresh or dried)
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot, heat olive oil and butter over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and sliced mushrooms to the pot. Cook until the mushrooms are softened and browned, about 8-10 minutes.
  3. Pour in the vegetable or chicken broth and add thyme. Bring to a simmer and let cook for about 15 minutes.
  4. Using an immersion blender, blend the soup until smooth. (Alternatively, you can blend in batches using a regular blender.)
  5. Stir in the heavy cream and season with salt and pepper. Heat through but do not boil.
  6. Serve hot, garnished with chopped parsley.
