- 1 pound fresh mushrooms, sliced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 teaspoon thyme (fresh or dried)
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, heat olive oil and butter over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
- Add minced garlic and sliced mushrooms to the pot. Cook until the mushrooms are softened and browned, about 8-10 minutes.
- Pour in the vegetable or chicken broth and add thyme. Bring to a simmer and let cook for about 15 minutes.
- Using an immersion blender, blend the soup until smooth. (Alternatively, you can blend in batches using a regular blender.)
- Stir in the heavy cream and season with salt and pepper. Heat through but do not boil.
- Serve hot, garnished with chopped parsley.
