Description

Ingredients

  • 4 medium sweet potatoes
  • 1 tbsp olive oil
  • 1 cup sliced mushrooms
  • 2 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pierce sweet potatoes with a fork and bake for 45-50 minutes until tender.
  3. Heat olive oil in a pan over medium heat.
  4. Add mushrooms and garlic, sauté for 3-4 minutes.
  5. Add spinach and cook until wilted.
  6. Stir in heavy cream and Parmesan cheese, simmer for 2 minutes.
  7. Cut open baked sweet potatoes and stuff with the creamy mixture.
  8. Serve warm.
