Ingredients

- 4 medium sweet potatoes
- 1 tbsp olive oil
- 1 cup sliced mushrooms
- 2 cups fresh spinach
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Pierce sweet potatoes with a fork and bake for 45-50 minutes until tender.
- Heat olive oil in a pan over medium heat.
- Add mushrooms and garlic, sauté for 3-4 minutes.
- Add spinach and cook until wilted.
- Stir in heavy cream and Parmesan cheese, simmer for 2 minutes.
- Cut open baked sweet potatoes and stuff with the creamy mixture.
- Serve warm.
Notes
- Use any type of mushrooms you prefer.
- For a lighter version, substitute heavy cream with Greek yogurt.
