Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes
  • 1/4 cup pesto sauce
  • 1/2 cup heavy cream
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cherry tomatoes with olive oil, salt, and pepper, then roast for 15 minutes.
  3. Season chicken breasts with salt, pepper, and garlic powder.
  4. Cook chicken in a skillet over medium heat for 6-7 minutes per side.
  5. Remove chicken and stir pesto and heavy cream into the skillet.
  6. Simmer sauce for 2-3 minutes, then return chicken to the pan.
  7. Sprinkle Parmesan cheese over the chicken and serve with roasted tomatoes.
