Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 cup heavy cream
  • 3 tbsp pesto
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken with salt, pepper, and garlic powder.
  3. Cook chicken for 5-6 minutes per side until golden and cooked through.
  4. Remove chicken from skillet and set aside.
  5. In the same skillet, add pesto and heavy cream. Stir well.
  6. Add sun-dried tomatoes and simmer for 2-3 minutes.
  7. Return chicken to the skillet and coat with the sauce.
  8. Cook for another 2 minutes until heated through.
  9. Serve immediately.
