Description
A classic potato salad with a creamy mustard and dill dressing. Perfect for picnics, barbecues, or as a side dish.
Ingredients

- 2 lbs potatoes, peeled and diced
- 1/2 cup mayonnaise
- 2 tbsp Dijon mustard
- 1 tbsp fresh dill, chopped
- 1/4 cup red onion, finely diced
- 2 tbsp celery, finely chopped
- 1 tbsp apple cider vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Boil the potatoes in salted water until tender, about 10-12 minutes. Drain and let cool.
- In a bowl, mix mayonnaise, Dijon mustard, dill, red onion, celery, vinegar, salt, and pepper.
- Add the cooled potatoes to the dressing and gently toss to coat.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- Use Yukon Gold or red potatoes for the best texture.
- Adjust mustard and dill to taste.
- For extra crunch, add chopped pickles or hard-boiled eggs.
