Ingredients

  • 8 oz pasta (penne or fettuccine)
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach, chopped
  • 8 oz salmon fillet, skinless and cubed
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large pan over medium heat.
  3. Add garlic and onion, sauté until softened.
  4. Add salmon cubes and cook for 3–4 minutes until lightly browned.
  5. Pour in heavy cream, Parmesan cheese, salt, pepper, basil, and oregano. Stir well.
  6. Add spinach and cook until wilted.
  7. Toss in the cooked pasta and mix until evenly coated.
  8. Serve warm.

Notes

  • Use fresh salmon for the best flavor.
  • Adjust seasoning to taste.
  • For a lighter version, replace heavy cream with half-and-half.
