Ingredients

  • 12 lasagna noodles
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1/2 cup heavy cream
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 375°F.
  2. Cook lasagna noodles according to package instructions.
  3. Heat olive oil in a pan and sauté onions and garlic until soft.
  4. Add mushrooms and spinach, cooking until tender.
  5. Mix ricotta cheese with salt and pepper in a bowl.
  6. Spread a layer of marinara sauce in a baking dish.
  7. Place 4 lasagna noodles over the sauce.
  8. Spread half the ricotta mixture, then half the mushroom-spinach mix.
  9. Repeat layers, ending with noodles and marinara sauce.
  10. Sprinkle mozzarella and Parmesan on top.
  11. Bake for 25 minutes until bubbly and golden.

Notes

  • Let lasagna rest 10 minutes before slicing.
