A quick and creamy pasta dish with spinach, tomatoes, and cheese-filled tortellini.
Ingredients

- 1 package (9 oz) cheese tortellini
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook tortellini according to package instructions. Drain and set aside.
- Heat olive oil in a pan over medium heat. Add garlic and sauté for 30 seconds.
- Add cherry tomatoes and cook for 2 minutes until softened.
- Stir in spinach and cook until wilted.
- Pour in heavy cream and bring to a simmer.
- Add cooked tortellini and Parmesan cheese. Stir until well coated.
- Season with salt and pepper. Serve warm.
Notes
- Use fresh tortellini for best results.
- Substitute half-and-half for a lighter version.
- Add red pepper flakes for extra heat.
