Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste
  • 8 ounces pasta of your choice
  • Parmesan cheese for serving

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add heavy cream, chicken broth, sun-dried tomatoes, garlic, Italian seasoning, salt, and pepper.
  3. Cook on low for 6 hours or high for 3 hours.
  4. Remove chicken and shred it.
  5. Add spinach and shredded chicken back to the crockpot.
  6. Cook for an additional 30 minutes.
  7. Prepare pasta according to package instructions.
  8. Combine cooked pasta with the sauce in the crockpot.
  9. Serve with Parmesan cheese on top.
