A rich and creamy Tuscan chicken pasta made in a crockpot.
Ingredients

- 4 boneless, skinless chicken breasts
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt to taste
- Pepper to taste
- 8 ounces pasta of your choice
- Parmesan cheese for serving
Instructions
- Place chicken breasts in the crockpot.
- Add heavy cream, chicken broth, sun-dried tomatoes, garlic, Italian seasoning, salt, and pepper.
- Cook on low for 6 hours or high for 3 hours.
- Remove chicken and shred it.
- Add spinach and shredded chicken back to the crockpot.
- Cook for an additional 30 minutes.
- Prepare pasta according to package instructions.
- Combine cooked pasta with the sauce in the crockpot.
- Serve with Parmesan cheese on top.

- Use whole wheat pasta for a healthier option.
- Adjust seasoning to your taste.
- Can substitute chicken with turkey or shrimp.
