Description

A rich and creamy pasta dish with tender chicken, sun-dried tomatoes, and spinach in a garlic Parmesan sauce.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (penne or fettuccine)
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Season chicken with salt, pepper, and Italian seasoning. Heat olive oil in a skillet over medium heat and cook chicken until golden and cooked through (about 6-7 minutes per side). Remove and slice.
  3. In the same skillet, sauté garlic until fragrant (about 30 seconds). Add heavy cream and Parmesan cheese, stirring until smooth.
  4. Add sun-dried tomatoes and spinach, cooking until spinach wilts (about 2 minutes).
  5. Return sliced chicken to the skillet and toss with the sauce. Add cooked pasta and mix well.
  6. Serve hot with extra Parmesan if desired.
